Hawaiian chicken and halloumi skewers Hawaiian chicken and halloumi skewers

The perfect addition to summer barbecues, these skewers are a great way to incorporate pineapple into savoury foods.

Makes 10 skewers

1 hour 40 minutes

  • 300g chicken breast, cubed
  • ¼ cup Sweet Baby Ray’s Hickory & Brown Sugar BBQ Sauce, plus extra for brushing
  • 200g halloumi, cubed
  • ½ a fresh pineapple, cubed
  • 4 shortcut bacon rashers, chopped
  • 1 red onion, chopped
  • 1 red or green capsicum, chopped
  • 1 lime, quartered, to serve

Add chicken and barbecue sauce to a large bowl and mix until well combined, then cover with cling wrap. Place in the fridge and allow to marinate for a minimum of 1 hour (or overnight if you have the time).
Preheat barbecue grill to medium–high. Thread pieces of chicken, halloumi, pineapple, bacon, onion and capsicum onto bamboo skewers, repeating until all ingredients are used.
Cook the skewers on the preheated grill, turning frequently until nicely browned on all sides and the meat is no longer pink in the centre, about 12 minutes. Occasionally brush extra marinade over the skewers as they cook. Garnish with lime to serve.
