Ingredients

  • 200g butter, melted
  • 300g digestive biscuits, crushed
  • 450g pureed pumpkin (see tip)
  • ½ tsp ground cinnamon
  • 1 tsp mixed spice
  • 145g (²⁄³ cup) brown sugar
  • 300ml thickened cream
  • 3 eggs, whisked
  • Whipped cream, to serve
  • Alli & Rose Gummy Body Parts 560g Item 132535, to serve
  • Red food colouring gel, to serve

Method

Preheat the oven to 170°C (150°C fanforced). Line a 20 x 30cm brownie or slice pan with baking paper.

Combine the butter and crushed digestive biscuits in a mixing bowl until the mixture resembles wet sand. Press evenly into the base of the lined pan.

To make the filling, whisk together the pumpkin, cinnamon, mixed spice, brown sugar and thickened cream in a large mixing bowl. Add the eggs and whisk until combined.

Pour the filling mixture onto the biscuit base and bake for 40–50 minutes, until the filling has mostly set, with a slight wobble in the middle. Remove from the oven and leave to cool in the pan completely (about 1 hour).

Carefully remove the slice from the pan and peel away the baking paper. Slice into 12 pieces and top with whipped cream, body part candy and red food colouring gel to serve.
