Fall in love with this sweet and tart combination that makes the perfect party dessert.


Serves 10-12


1 hr, plus 2 hrs cooling



  • 6 egg whites
  • 330g sugar
  • 1 tsp vanilla essence
  • 600ml thickened cream
  • 250g fresh berries, to serve
  • Leftover Easter chocolate, to serve


Preheat the oven to 120°C. In a large mixing bowl, add egg whites and ¼ teaspoon of salt. Mix with an electric mixer until soft peaks form. Add the sugar 1 tablespoon at a time, whisking after each addition until the sugar dissolves.
Once all the sugar has been added, continue whisking until stiff peaks form, about 2–3 minutes.
Line 2 trays with baking paper. Spoon the meringue mixture onto the lined trays to make 10–12 large circles. Use the back of the spoon to make an indentation in the centre of each.
Reduce the oven temperature to 100°C, and bake the nests for 40–50 minutes. Prop the door ajar and leave to cool completely in the oven.
Whip the cream to soft peaks. Top the meringue nests with cream, berries and Easter chocolate to serve.
