Cater to your meat-free guests with Suzy Spoon's delicious vegan mushroom gravy.


Serves 6


15 minutes prep, 15 minutes cooking



  • ⅓ cup olive oil
  • 1 onion, finely diced
  • 1 big field mushroom, finely diced
  • 2 garlic cloves, minced
  • 1 tbs sage, chopped finely
  • ½ tsp pepper
  • 1 cup flour
  • 3½ cups vegetable stock
  • 2 tbs soy sauce


In a saucepan combine oil and onion. Cook on medium heat until onion becomes translucent.
Add the mushroom and cook for 10 minutes. Then add the garlic, sage and ½ tsp of pepper, and cook for a further 1 minute.
In a separate bowl or jar, combine the flour, vegetable stock and soy sauce. Add it to the mushrooms in the fry pan. Stir for 10 minutes until gravy thickens. Serve hot.
