Taro breakfast fritters with avocado and poached eggs Taro breakfast fritters with avocado and poached eggs

Whether it's breakfast or brunch, taro fritters are a healthy yet delicious alternative. Perfectly crispy and easy to make!

Makes 4

20 mins

  • 500g taro, washed, peeled and coarsely grated
  • 2 eggs
  • ¼ cup (35g) all-purpose flour
  • 2 spring onions, chopped
  • ¼ bunch coriander, finely chopped, plus extra leaves for garnish
  • 2 cloves garlic, crushed
  • ¼ cup (60ml) olive oil
  • Poached eggs, to serve (optional)
  • Avocado, to serve (optional)
  • Spring onion, sliced, to serve

In a mixing bowl, combine the taro, eggs, flour, spring onions, chopped coriander and garlic. Season well with salt and pepper and mix until thoroughly combined.
Heat 1 tablespoon of oil in a large frypan over medium heat. Add 1⁄³ cupfuls of fritter mix into the pan and press down gently to make about 8cm circles, making sure not to overcrowd the pan. Fry for 2 minutes on each side, or until golden brown and cooked through. Remove the fritters onto a plate and keep warm. Repeat with the remaining mix until all the mix is used up.
Serve the fritters warm, as part of a breakfast platter, topped with poached eggs, avocado, spring onion or any of your favourite toppings
